Remembering Uncle Ng Hock Chuan: The Silent Legend Behind Chomp Chomp’s Ah Hock Fried Hokkien Noodles

If you grew up eating at Chomp Chomp Food Centre, you know the routine: you place your order, snag a low table under the buzzing lights, and wait patiently while the smoky aroma of grilled satay and fried noodles fills the air. For decades, one stall stood out as an undisputed pillar of the food centre: Ah Hock Fried Hokkien Noodles.

On July 16, 2026, Singapore lost one of its true hawker masters. Mr. Ng Hock Chuan—the quiet, hardworking uncle behind stall #01-27—passed away peacefully at the age of 79.

News of his passing broke quietly on social media after a long-time customer went to Chomp Chomp expecting a hot plate of noodles, only to find the shutters down and learn the news from a neighboring stall owner. As tributes continue to pour in across the island, we take a look back at the incredible history, dedication, and legacy of Uncle Ng.

1. Born into Hokkien Mee Royalty

Uncle Ng wasn’t just any hawker; he was second-generation street food royalty.

His father, Ng Seng, was one of two brothers who pioneered the iconic Singapore-style fried Hokkien prawn mee along Rochor Road back in the 1950s. Back then, the dish was adapted from traditional Fujian noodle recipes, transformed with rich prawn stock, egg noodles, and thin rice vermicelli into the local staple we know and love today.

In 1966, Uncle Ng (the fourth son) branched out on his own in the Serangoon Gardens area. By the 1970s, he set up shop at the newly opened Chomp Chomp Food Centre, where he would spend the next five decades perfecting his craft.

2. The Craft: Why Ah Hock’s Hokkien Mee Was “Unbeatable”

What made a plate of Ah Hock Hokkien mee so legendary that diners willingly endured 30 to 45-minute wait times during peak dinner hours?

  • Thin Bee Hoon & Yellow Noodles: Unlike stalls that lean heavily on thick, coarse bee hoon, Uncle Ng insisted on using thin rice vermicelli paired with egg noodles. This specific ratio allowed the noodles to soak up every drop of broth without becoming soggy.
  • 3-Hour Umami Stock: The backbone of the dish was a deep, rich broth made by simmering pork bones and prawn heads for hours.
  • Dry, Smoky Style: Ah Hock served a drier, highly aromatic rendition packed with intense wok hei (smoky breath of the wok), accompanied by fresh prawns, squid (sotong), pork slices, lime, and a punchy sambal.

3. Michelin Recognition Without the Flaunt

Since 2018, Ah Hock Fried Hokkien Noodles has consistently earned a place on the Michelin Guide Singapore list. Yet, if you walked up to his stall, you wouldn’t find flashy banners or giant red Michelin decals emblazoned on the glass panel.

Uncle Ng preferred humility over hype. He never displayed the Michelin sticker, choosing instead to let the quality of his food and the loyal queues speak for themselves.

Regulars remember him as a man of few words: never loud, never showy, always offering a gentle, quiet smile before turning straight back to his wok or cash register with absolute focus.

4. What Lies Ahead for Stall #01-27?

While it remains unconfirmed when or if Ah Hock Fried Hokkien Noodles will officially reopen, there is hope among Singapore’s food community. Uncle Ng’s sons have worked alongside him at the stall for many years, mastering the family recipe and handling wok duties in recent years.

Diners across Singapore are hoping his sons will keep the flames lit and carry forward the culinary heritage that Uncle Ng spent 50 years building.
